We don't eat meat, and in certain company that freaks people out...or makes them curious. Even after 20 years of eating this way, we still get the occasional question: "What do you guys eat?!" The Veganic Verses is our answer. We started in while living in the South, where being veg can be challenging.
This is a mere sampling of the scrumptious bounty we enjoy, and could also serve as a resource for anyone interested in trying vegan cuisine themselves.
Adapted from a Rachael Ray recipe. We added basil and used Nutritional Yeast instead of parm. We substituted sun-dried tomatoes for the mushrooms. But we used mushroom stock. Our breath still smells like garlic. But it was worth it.
